How to Make Boil and Fried Chickpeas

Ingredients:

  • 1 pint chickpea                                      $1.75
  • 1 1/2 tablespoon ground cumin(heap)       $0.50
  • 1 large onion (chopped)                           $0.15
  • 4 clove garlic (chopped)                           $0.10
  • 1 medium hot pepper (chopped)               $0.25
  • salt to taste                                            $0.05
  • 1 potspoon oil                                         $0.15
  • total cost 2.95

Preparation:

  • wash chickpea add chickpea into a large bowl of water  the chickpea must be totally submerged  and set aside overnight or 4 hours
  • strain chickpea
  • heat water in a pressure cooker/pot
  • add chickpea and allow to pressure 15 minutes
  • check for desire tenderness
  • heat oil in a pan add all ingredients stir for 2 minutes
  • add chickpea, stir fry for a few minutes about 4-5 minutes
  • SERVE HOT ALONE OR WITH MANGO CHUTNEY  GOOD FOR 4 ADULTS

How to Make Potato Balls

Potato Balls are very simple to prepare. They are great for parties and kids may even love them.

Ingredients:

  • 2 lbs Idaho Potatoes
  • 1 1/2 tablespoon ground cumin (heap)
  • 1 medium hot pepper (blend)
  • 1 pt. oil
  • Salt to taste
  • 3 eggs (beaten)
  • 1/2 lb flour

Preparation:

Peal, wash and cut the potatoes into four pieces. Add the potatoes to a pot of boiling water and allow them to cook until tender.

Strain the potatoes then set aside. Add cumin, pepper, salt and mash the mixture until it’s smooth and no potatoes are left un-mashed.

Mix all the ingredients well. Make the mixture into balls the size of gulf balls. Make about 24 and set aside.

Heat oil in a pan. Dip 4 or 5 balls into egg and roll around until covered. Remove and roll in flour.

Place one ball at a time into oil and allow to fry, turning so as to brown all around. Repeat with other balls

Serve alone or with Mango Chutney. Wonderful for Sunday breakfast, and more than enough for four adults.
