How to Make Mango Chutney

Ingredients:

  • 2 large green mangoes(the inside must be green not yellowish)
  • 1 large hot pepper
  • 1 tablespoon salt(level)

Preparation:

  • peel mangoes
  • cut into small pieces
  • heat 3 cups water
  • add mangoes, salt, pepper
  • allow to boil for 5 minutes stir
  • continue boiling , add water as needed until mango and pepper dissolve
  • stir , remove from fire
  • allow to cool to room temperature

THIS IS GREAT IN ALL RESPECT

GROUND CUMIN MAY BE ADDED TO ENHANCE A SPECIAL TASTE

How to Make Dahl

Ingredients:

  • 1lb split peas
  • 2 tablespoon ground cumin (level)
  • 1 tablespoon salt (level) or salt to taste
  • 1 medium hot pepper or 1/2 no less
  • 1 tablespoon curry powder(level)
  • 6 cloves garlic,  chopped, and divided into 2 equal parts
  • 2 tablespoon oil

Preparation:

  • wash and add peas into a pot
  • add water to pot, 2 inches above peas level (a pressure can be used)
  • stir and allow to boil
  • remove white froth
  • add all ingredients except one portion of garlic and oil,into pot
  • pressure for 5 minutes
  • uncover and stir, add 2 cups of water and allow to boil for 20 minutes , add water if needed,
  • when peas is completely melt, stir remove from heat and cover
  • in a cadle or a deep metal potspoon, add oil and other portion of garlic heat until garlic is dark brown, add to peas , (just lift pot cover enough to let ladle under cover)
  • stir and cover.
  • THIS IS A VERY VERSATILE SAUCE AND CAN BE USED ON A WIDE VARIETY OF DISHES
  • wonderful as a soup especially good with curry( except crab curry,) fish and vegatables and rice

How to prepare Cumin/Coriander for Cooking

Roasted cumin/coriander seed grounded

1/2 lb cumin or 1/2 coriander seed

cumin will appear in most of the recipes

  • Wash cumin/ coriander seed and drain using a strainer
  • place pan on fire add cumin/ coriander
  • stir  using a pot spoon (not a plastic or rubber spoon) for 3 minutes
  • reduce fire to medium continue stirring
  • when no cumin/ coriander seed sticks on the spoon remove from fire
  • continue stirring to avoid the cumin/ coriander  from burning ,stir for 4-5 minutes until cumin/ coriander  is warm set aside to cool to room temperature
  • Ground using a coffee grinder , store in a sealed bottle
  • Cumin is great , not only in curry but a varity of other foods
