How to Make Curry Turkey

Turkey legs are pretty good for making curry and bunjal. The Wild Turkey is especially good for outdoor cooking and also Bunjal.

Ingredients:

  • 2 lbs of Turkey legs (cut to look like stakes). This can be obtained from most Supermarkets.
  • 2 tablespoons of curry powder
  • 1 tablespoon of ground Cumin
  • 1 tablespoon of ground Coriander
  • 1 medium hot pepper
  • 1 large onion (chopped)
  • 1/2 head of garlic (chopped)
  • 1 pot spoon of oil
  • Salt to taste
  • 1 teaspoon of liquid smoke

Preperation:

Remove the Turkey’s skin and the middle bone if possible. Wash
and add all the ingredients (except the oil and liquid smoke) into a bowl.

Mix, then add 1 cup of water and keep mixing.

Heat some oil in a pan or pot. Add the mixture and stir for 4-5 minutes. Add water as needed to avoid burning.

Add the Turkey and stir. Allow the Turkey to lose it’s juices. Stir and allow the meat to simmer on medium heat.

When all the juice has evaporated, add 1 cup of water and liquid smoke.

Allow this to cook. Add water as needed until desired tenderness is reached. Remove it from the heat and let it cool for 5 minutes.

4-6 servings, wonderful alone, with Rice or Roti.

How to Curry Duck

Curry duck is a very delicious and popular meal. It has a distinct flavor and texture that makes it unique. Try our Curry Duck recipe.

Curry duck, otherwise known as “Duck Curry”, is very delicious and popular.

  • 1 (6-8 lbs) duck (drake is better)
  • 4 tablespoon curry powder (heap)
  • 1 tablespoon ground cumin (heap)
  • 1 tablespoon ground coriander (heap)
  • 1 head garlic peeled and chopped
  • 2 large onions skin remove and chopped
  • 4 chicken bullions
  • 1 tablespoon salt (level) or salt to taste
  • 1 medium hot pepper (optional)
  • 1/2 teaspoon blackpepper if not using hot pepper
  • 2 potspoon oil

Cut the duck into small pieces. Remove as much skin and fat as possible. Wash throughly and set aside.

Add all ingredients except oil, into a bowl, mix, add 2 cups of water and mix well.

Add oil to the pot or pan, heat, add mixture, stir and allow to fry a little while stirring for about 5 minutes.

Add 1 1/2 cup water, allow to simmer adding small amounts of water when needed.

Let it cook for 20 minutes and continue stirring.

Add the duck.

Stir the curry into the duck until it’s coated.

Add 1 cup water and cover for 3-4 minutes.

Remove cover and stir. Allow the pink of duck to fade.

Add 2 cups of water, cover and allow to cook to desired tenderness. Add water when necessary

Goes very well with rice or Roti and superb with Dalh Puri.

How To Curry Shrimp

Curry shrimp is a great way of preparing shrimp. There are small, medium, large and extra large shrimp. They all make an excellent curry.

  • 1 lb shrimp
  • 2 tablespoon curry powder (heap)
  • 1/2 teaspoon grounded cumin (level)
  • 1/2 teaspoon ground coriander (level
  • 1 stalk celery (chopped)
  • 3 cloves garlic (chopped
  • 1 small onion(chopped)
  • 2 medium tomatoes
  • 1 potspoon oil
  • 1 lb ochro(optional)
  • 1/2 teaspoon salt(level) / or salt to taste

  1. Remove shells and devein shrimp.  Then wash in cold water and set aside.

    Cut the tomatoes into 16 pieces  and set aside.

    Add all other ingredients into a bowl (except oil), mix then add 1 cup water and mix again.

    Heat oil in a pan/pot, add mixture and stir for 3-5 minutes. Add water and continue stirring for another 4-5 minutes.

    Add tomatoes and shrimp and continue stirring for 3 minutes.

    Cover and remove from fire. Let this stand for 5 minutes.

    Serve with rice or roti

  • 1 lb fish fillet (other types of fish can be used, but beware of bones, which kids may not be able to eat)
  • 2 tablespoon curry powder (heap)
  • 1/2 tablespoon ground cumin (level)
  • 1/2 tablespoon ground coriander (level)
  • 1/2 ground black pepper (level)
  • 1/2 table spoon salt (level) or salt to taste
  • 2 medium limes
  • 1 green mango ( if available)
  • 2 medium tomatoes (cut into quarters)
  • 1 medium onion (chopped)
  • 4 cloves garlic (chopped)
  • 1 potspoon oil
  • 1 medium hot pepper (Optional)

  1. Wash the Fish using the juice of 1 lime then rinse with cold water and set aside.
  2. Peel a green mango and cut into 5 or 6 pieces then set aside.
  3. Squeeze another lime into a glass and set aside.
  4. Add all other ingredients (except oil and tomatoes) in a bowl. Mix and add 1 cup water. Mix well.
  5. Heat oil in a pan/pot (non stick is very good), add mixture and stir for 4-5 minutes. Add 1 cup water and mango (if available) and continue stirring for 5 minutes or until mango is tenderized. Add small amounts of water if needed.
  6. Add fish and lime juice. Dip some of the gravy and place on top of fish until it is covered.
  7. Cover pot and let simmer for 2 minutes. Uncover and remove pan from the heat.
  8. Shake pan gently until fish moves freely, add water if needed and tomatoes. Place the pan back on the heat and cover. Allow to simmer for 3 minutes.
  9. Remove from heat and allow to stand for 5 minutes.
  10. This makes 4 good servings over Rice or Roti.

  1. Remove skin and fat from chicken, wash with 2 limes then rins throughly to remove lime smell

    Add all ingredients except oil and chicken , into a bowl add 1 cup of water mix throughly.

    Add oil in a pan or pot (non stick is very good) and heat add mix ingredients and stir for a few minutes (3 or 4 ) add1 cup water contuinue stirring , adding water as necessary and contuinue stirring for 6-10 minutes.

    Add chicken and stir until chicken is coated with mixture, add 1/2 cup water, stir and cover for 2-3 minutes, remove cover and continue stirring until the redness from the chicken disappear

    Add pototoes if needed

    Add 1 1/2 cups of water, cover and cook on slow heat for 8-10 minutes. Add small amounts of water if needed .

    Taste the sauce for desirable salt.

    Serve over rice or roti including dalh puri

    enough for 6 adults

Instructions
  1. Clean beef, remove bones and cut into bite size. Wash gently with cold water and set aside.
  2. Chop onion, garlic and celery (do not blend). Add all other ingredients except beef, potatoes and oil. Mix in a bowl with 1 cup of water.
  3. In a pan or pot add oil and heat. When the oil is hot add mixture and stir for 5 minutes. Then add 1 cup of water and allow to boil/fry on low heat.
  4. Clean and peel potatoes, cut into quarters and set aside. Add the beef to the pot and stir. Cover this for three minuets then stir it again until most liquid has evaporated and the beef is no longer pink.
  5. Add 2 cups of water and allow to boil. Add water until desired tenderness is reached. Add potatoes and let simmer until potatoes are tender. .Add egg plant if needed. Cover and cook for 3 more minutes
  6. Servings for 4-6 people.
