How to Make Cappuccino Muffins

These muffins are great for breakfast or as a dessert.

Ingredients:

  • 2 1/2 cups of all purpose flour
  • 3/4 cups each of granulated and packed sugar
  • 3/4 cups sifted cocoa
  • 2 tsp. each of baking powder and baking soda
  • 1 tsp each of cinnamon and salt
  • 3/4 cups of butter
  • 1 1/2 cups of strong black coffee
  • 2 eggs

TOPPING

  • 1/2 cup granulated sugar
  • 1 tbsp. cinnamon

Preparation:

Heat the oven to 375 degrees. In a large bowl, stir together flour, the granulated sugar, the packed sugar, baking powder, baking soda, cinnamon and salt. With a pastry blender or 2 knives cut the butter until the mixture resembles fine crumbs.

In a separate container, mix together coffee and eggs. Add this into the first mixture. Stir until the combined mixture is moist (batter will be lumpy).

Divide this into 20 equal muffin cups (paper lined cups are best)

For topping, mix sugar and cinnamon, and sprinkle this over the muffins before baking.

Bake for 15-20 minutes. To test, insert a toothpick, if it comes out clean it’s done.

Let them cool for 10 minutes in a pan or wire rack

How to make Peanut Butter Cookies

This is the first of a series of different sweet foods that will be presented on our site. There will be a vast range of such foods.This recipe has had many improvements and is a favorite of my sister.

Ingredients:

  • 2/3 cups butter flavor Crisco
  • 2/3 cups peanut butter (regular)
  • 1/3 cup granulated sugar
  • 2/3 cups packed brown sugar
  • 1 egg
  • 1 tps. vanilla
  • 1 1/2 cups all purpose flour
  • 1/2 tps baking soda
  • 1/2 cup roasted shelled peanuts
  • 1/2 extra granulated sugar for rolling cookies
  • 1/2 tps salt

Preparation:

In a large bowl, cream together the Crisco, peanut butter, granulated and brown sugar. Blend in the egg and vanilla.

In a medium bowl, combine flour, baking soda and salt. Stir it into a cream mixture until a smooth dough forms.

Full 1 table spoon of dough and roll it into a ball. Make 18-24 such balls. Roll the balls into extra sugar. Place them into a foil lined cookie sheet.

Dip a fork into flour and flatten the balls. Add peanuts on the newly formed cookie.

Bake in a pre heated oven for 8-10 minutes or until the cookies are golden brown.

Remove and cool on a wire rack.

Eat without thinking!

How to make Peanut Butter Cookies

How to make Sweet Rice – Siernee

This is an old rice recipe. I have never seen anyone make Siernee besides my close family. It is very exotic and I do not know of the origin, but it appears to be Arabic. Just make it and you will love it.

Ingredients:

  • 1 lb rice flour
  • 1/2 lb raisins
  • 1/4lb cherry (not the fresh kind, you will find this in supermarkets bottled).
  • 1/4lb nuts chopped
  • 2/3 tin condensed milk
  • 1 tin evaporated milk
  • 2 cups water
  • 1/4 lb butter
  • 2 tsp vanilla essence

Preparation:

In a large bowl combine both milk, water, vanilla, raisins and chopped cherries. Mix well until condensed milk dissolves.

Add rice flour to a hot pan and reduce heat to low medium. Turn rice constantly until it begins to brown.

When flour is light brown, add liquid mixture and continue to turn until all liquid is absorbed.

Remove from heat and let cool. Add nuts and serve.

This can also be done with flour but the taste is not the same. The rice version is far better.
