how to make crab soup

Crab ,has a wonderful taste, it does not too much other spices to make the dish very tasty, crab soup is really delicious and is a superb first course in any 3/4 course meal or as a light soup

Ingredients:

  • 1 lb crab (any crab will do)
  • 1 lb bok choy (wash and chopped)leaf spinage can also be used
  • 2 smaal potatoes(optional)cut into 4 pieces each
  • 1/2 table spoon ground black pepper
  • 4 head scallion( wash and chopped)
  • 1 pack noodle soup
  • salt to taste
  • 1 tablespoon oil

Preperation:

  • clean crabs , wash remove the tip of feet set in water
  • heat oil in pot add crabs
  • let crab fry for a few minutes stirring
  • add salt black pepper and 5 cups water
  • allow to boil for 5 minutes
  • add noodle soup and 2 cups water
  • reduce heat to medium and allow to boil for 45 minutes adding water as needed
  • continue boiling until flesh of crab appears in liquid
  • add potatoes and scallion
  • boil until potatoes are tender
  • add bok choy
  • cover and simmer for 3 minutes
  • remove from fire

serve hot as a first course or alone as a light soup. As a first course remove potatoes
