Cheese Rolls are a different kind of pastry. It’s Cheap to prepare and really great as a snack or as a finger food.
Ingredients:
- 1 lb flour + flour for dusting
- 1/4 butter
- 1/2 tps salt
- 1 cup 1% milk cold
- cold water
- 1 egg
- 1/2 lb sharp cheddar cheese(grated)
- 1 tps mustard plain
- 2 tps tin milk
- 1/2 hot pepper (grained) or 1 tbs. hot sauce
- A touch of salt
Preparation:
Mix grated cheese, mustard, milk, pepper and salt into a thick paste and set aside.
Mix flour, butter, salt and milk with a whisk or your fingers, but do not kneed. Add a little cold water and continue until mixture starts to come together.
Make ping pong size balls. Flatten each ball using a rolling pin, and dust with flour if necessary.
Add a little cheese paste and spread across. DO NOT COVER THE WHOLE SURFACE JUST A LITTLE FROM THE FAR END.
Fold once to half way, then fold again to the other end.
Use a fork to close the ends. NOTE DO NOT PUT TOO MUCH CHEESE PASTE IT WILL BURST THE ROLL WHILE BAKING.
Heat oven to 350 degree. Place rolls into oven and bake for 15 minutes.
Beat the egg with 1/4 cup water. Remove rolls from oven and base with egg wash.
Return to oven and bake for 10 more minutes. Remove from oven and let cool.
SERVE AS A SNACK OR IT’S REALLY GREAT AS A FINGER FOOD.

How to Make Cheese Rolls
This is a unique recipe, it can be eaten with rice. bread or alone as a finger food.
Ingredients:
- 2 lbs boneless chicken breast
- 1 tps baking soda NOT BAKING POWDER
- 2 table spoon curry powder
- 1/2 tablespoon ground cumin
- 1/2 tablespoon ground coriander
- 1 onion , 4 clove garlic and 1 medium pepper (BLEND)
- salt to taste
- oil for frying
Preparation:
- Cut breast into finger size pieces
- add baking soda and mix well set aside for 2 hours
- mix all other ingredients together EXCEPT OIL
- After 2 hour wash breast 3 times and allow to drain
- mixed into curry mixture and set aside for 1 hr
- heat oil in pan place 6-10 fingers and allow to fry to golden brown remove and repeat until all fingers are cooked
serve alone , with bread or veggie rice

How to Make Fried Curry Chicken Fingers
Salt fish cakes or fish cakes are very popular and can be made in several ways.It is very good with a sauce and rice, with bread, as a sandwich, or as a finger food.
Ingredients:
- 1 lb boneless salt fish
- 2 large potatoes
- 1 egg
- 1 medium hot pepper(grind)
- 3 bulbs scallion(chopped)
- Flour for dusting
- Oil for frying
Preparation:
Steam the salt fish for 5 minutes. Strain, wash and mash with cold water. Strain and squeeze the excess water away. Wash again if more salt needs to be removed. Do not wash away all the salt, just leave the salt according to taste.
Peel, wash, and cut the potatoes into 4 pieces each. Boil them until tender. Allow the potatoes to cool. Mash them until smooth, then add to the salt fish.
Add the egg, pepper, scallion and mix thoroughly. Make this mix into small bite size cakes or balls(20-24).
Heat oil in pan. Dust 5 or 6 of the cakes/balls with flour and fry them until their golden brown all over. Repeat until the mixture is done.
Allow this to cool. Serve it with bread or as a finger food.

How to Make Salt Fish Cakes
Stuffed eggs is a tasty finger food, very inexpensive and simple to prepare. There is never enough at a party.
Ingredients:
- 12 large eggs
- 2 tsp. mustard
- 1/2 stick of butter
- 1 medium pepper grind or blend without water
- 4 tablespoon tin milk
- Salt to taste
- 4 bulb scallion/shallot finally chopped
Preparation:
Hard boil the eggs, cool, peel and cut into halves length wise. Remove all yolks.
Add all ingredients and yolks into a bowl. Mix and mash until blended and smooth.
Scoop mixture and place into each empty half egg white. Repeat until all mixture and eggs are full.
Good alone or can be eaten with bread or roti.

How to Make Stuffed Eggs
Cassava Roti is another favorite of West Indians. Very easy to make and delicious.
Ingredients:
- 2 lbs flour
- 1 lb cassava (yucca)
- 1/2 teaspoon baking powder
- Touch of salt
- 1/2 tablespoon oil
- Flour for dusting
- 2 cups water
Preparation:
Peel cassava (yucca) and wash. Shred the cassava using a Grater. Do not blend.
Add flour, baking powder and salt.
Kneed the mixture while adding water a little at a time. Kneed until mixture is like a bread dough.
Form final mixture into balls a little larger than tennis balls.
Dust a flat surface with flour and roll the balls flat across it using a Rolling Pin.
The final product must be about 1/2 cm thick and circular like a plate.
Place pan on medium fire and allow to heat. Brush pan with oil and place roti on it.
Base the top of roti with oil and allow to cook for 50 to 60 seconds.
Flip and cook for 40 – 50 more secs.
Remove and place on a plate.
Great with Curry, especially Shrimp Curry.

How to Make Cassava Roti
Potato roti can be eaten alone, with any curry, or with chutney. Anyhow it’s wonderful.
Ingredients:
- 2 lbs potatoes
- 2 tablespoon ground cumin
- 1 hot pepper(ground)
- Salt to taste
- 1 head garlic(ground)
- 2 head scallion/shallot(chopped)
- 1/2 lb flour for dusting
- 1/2 cup oil for cooking
Preparation:
Peel potatoes and wash. Cut each potato into 4 pieces. Boil until tender and then strain.
Allow it to cool in a large bowl.
Liquefy garlic and pepper (use very little water).
Add all ingredients to the potato and mash until smooth. Set aside for 20 minutes.
Stuff into ball just like when making dahl puri.
All other preparation remains the same as dahl puri.

How to Make Potato Roti
Whole turkey can be cooked in 4 different ways, (1) charcoal rotisserie. (2) electric rotisserie. (3) deep frying and conventional oven. The choice is all yours. I will start with the conventional way because most people still use this method.
Ingredients:
- 1 12-15 lbs turkey
- 1 table spoon baking powder
- 2 table spoon salt
- 10 head scallion
- 1 head garlic ( PEELED)
- 1 pack fresh thyme
- 2 stalk celery
- 1 teaspoon black pepper
Preparation:
- Wash and clean turkey, cut breast skin from bottom to top on both sides
- Carefully peel skin all the way to the neck
- On both sides make thin slices on the breast
- Apply baking soda to the slices rubbing in between each slice
- add 1 tablespoon all over turkey under its skin where possible
- Pull skin to original position, place turkey in a large container and refrigerate overnight
- Remove turkey and wash thoroughly to remove baking soda taste
- Place turkey on a cutting board and rub with black pepper
- Blend scallion, thyme, garlic , celery and remaining salt
- rub blended ingredients all under turkey skin where possible making sure that some is rub into the slices
- Wrap turkey in foil and place in fridge for 1 day at least
- pre heat oven to 450 degrees
- place turkey on a baking rack on a pan and bake at 450 for 30 minutes, then reduce heat to 375 degrees
- When breast is 165 and legs is 170 remove bird
- let sit for 30 minutes
- SERVE

How to Make Thanksgiving and Christmas turkey
This is a non tradition BBQ as it is done in an oven .It can be don as well on a charcoal grill or electric only there will be a difference in the end preparation. It is a favorite of my sister and it is really great.
Ingredients:
- 2 lbs beef ribs (Short rib is really excellent)
- 3/4 ketchup
- 3/4 cup water
- 1 tbs. salt
- 3 tbs. honey
- 1/2 tps. ground cinnamon
- 1/4 tps. ground clove
- 1 tps. Worcestershire sauce
- 1/2 tps cayenne pepper
- 2 tbs. liquid smoke (most supermarket carry it or internet)
Preparation:
- Clean beef, brown on 350 for 20 minutes on each side
- drain all drippings
- Mix all other ingredients in a bowl
- pour and mix mixture with ribs
- Cover and bake for 1 hr. and 20 minutes ALLOW TO COOL FOR 5 MINUTES AND EAT
- IF USING AN OUTSIDE GRILL
- GRILL RIBS TO NEAR DESIRED TENDERNESS
- BRUSH ON SAUCE COOK FOR 1 MINUTE
- FLIP BRUSH ON MORE SAUCE COOK FORE 1 MINUTE
- REMOVE AND EAT
