souse recipe

Souse , a liquid , meat and other ingredients is not considered a soup but the only name souse. It can be made from different cuts of meat , my recipe will deal with 5 different cuts in order of preference.all these cuts can be found almost anywhere but because of eating habits some people will only use certain cuts . the choice is yours

Ingredients:

  • 4 lbs round stake (bones remove, cleanand cut into bite size pieces) or cow face/cow tongue /pig trotters/chicken foot.
  • 2 cups vinigar
  • 8 large juicee limes
  • 1 large hot pepper (chopped)
  • 1 large onion(thinley slice)
  • 2 large cucumber (wash and thinley sliced)
  • salt to taste
  •  water

 

 


Preperation:

  • Wash meat and add to 8 cups boiling water
  • allow to boil until beef is no longer pink
  • Strain away water , wash beef gently
  • Add 6 cups water , 1 cup vinigar and 1 tps. salt
  • Pressure meat for 7 minutes
  • Pour into a large container  and allow to cool to room temperature
  • add cucumbers, onions, pepper  and 1 cup vinigar
  • Add the juice of limes 1 at a time and salt until desire taste is reach
  • Set aside for 1 hour
