Vegetable rice is a wonderful meal. But when stir fried in fresh garlic, it’s superb. It can be eaten with almost anything, especially smoke turkey legs
Ingredients:
- 3/4 pint of Basmatti rice
- 1 head of garlic (peeled and sliced)
- 1/2 lb of long or string beans
- 1 medium green bell pepper
- 1 medium red/yellow bell pepper
- 2 carrots
- 2 tablespoons of oil
- Salt to taste
- 1 tablespoon of paprika
- 4 bulbs scallion/shallot (chopped into 1/2 inch pieces and set aside)
- 1 stalk of celery (thinly sliced and set aside)
Preparation:
Add rice to 6-8 cups of boiling water. Test rice after 10 minutes for tenderness. It must not be too soft, but a little hard and also add a little water if necessary. Strain rice and shake while cold water is running over it Let rice drain fully for 10 minutes then refrigerate for 20 minutes.
Cut ends off long beans/string beans, then cut into 1/2 inch pieces (set aside). Cut bell peppers across (not top to bottom). Clean then cut into small strips (set aside). Slice carrots very thin.
Heat oil in a wok/pan. Add garlic and saute until brownish.
Add small amounts of rice at a time stir fry, add salt and paprika. Continue stir frying until rice is hot. Remove from fire
Add all vegetables and mixed into rice.
Serve with any meat, but it’s especially great with Smoke Turkey Legs.
