Curry Chicken

Curry chicken is very popular and there are many variations. Try this recipe and you will never have to try another.

Curried white feathered chicken

  • 4 lbs. chicken (cut up into medium size pieces)
  • 3 tablespoon curry powder (heap)
  • 1 tablespoon ground cumin ( level)
  • 1 tablespoon ground coriander (level)
  • 4 chicken bullion
  • 1 tablespoon salt (level) or salt to taste
  • 1/2 hot pepper (optional)
  • 1/2 teaspoon ground black pepper
  • 1/2 head garlic chopped (chopped
  • 1 large onion chopped (chopped
  • 2 stalk celery chopped
  • 1/2 cup oil
  • potatoes can be added if desire(2 smallĀ , peel and cut into 4 pieces each)

Instructions
  1. Remove skin and fat from chicken, rinse with 2 limes then rinse to remove lime smell

    Add all ingredients except oil and chicken, into a bowl add 1 cup of water mix thoroughly.

    Add oil in a pan or pot (nonstick is very good) and heat add mix ingredients and stir for a few minutes (3 or 4) add1 cup water continue stirring, adding water as necessary and continue stirring for 6-10 minutes.

    Add chicken and stir until chicken is coated with mixture, add 1/2 cup water, stir and cover for 2-3 minutes, remove cover and continue stirring until the redness from the chicken disappear

    Add potatoes if needed

    Add 1 1/2 cups of water, cover and cook on low heat for 8-10 minutes. Add small amounts of water if needed.

    Taste the sauce for desirable salt.

    Serve over rice or roti including dalh puri

    enough for 6 adults
