How to Curry Beef with Eggplant

Beef curry mixed with eggplant is even better than the beef curry. It is wonderful over rice.

Ingredients:

  • 1 lb beef
  • 1 lb eggplant
  • 2 tablespoon curry powder
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1/2 tablespoon turmeric
  • 1/2 head garlic (chopped)
  • 1 medium onion(chopped)
  • 1 medium hot pepper(chopped)
  • 2 beef bullion
  • salt to taste
  • 1 pot spoon oil

Preparation:

  • Clean and cut beef into bite size pieces
  • add all ingredients (EXCEPT EGGPLANT AND OIL) into beef in a bowl
  • heat oil in a pan/pot(a pressure cooker can be used )
  • add all ingredients and 1 cup water
  • stir for 5 minutes
  • allow water to evaporate
  • add 2 cups of water allow to boil/pressure
  • when beef reach desire tenderness , allow water to evaporate
  • wash and cut eggplant in half then cut into 12-16 3 inches piece
  • when most water in curry evaporates add eggplant
  • stir until eggplant is coated with curry
  • cover and allow to simmer for 3 minutes
  • remove cover shake panĀ  and test eggplant for desire tenderness
  • if needed add a little water and cover for 2 more minutes
  • remove from heat and let sit for 5 minutes

serve with rice or roti
