Souse , a liquid , meat and other ingredients is not considered a soup but the only name souse. It can be made from different cuts of meat , my recipe will deal with 5 different cuts in order of preference.all these cuts can be found almost anywhere but because of eating habits some people will only use certain cuts . the choice is yours
Ingredients:
- 4 lbs round stake (bones remove, clean and cut into bite size pieces) or cow face/cow tongue /pig trotters/chicken foot.
- 2 cups vinegar
- 8 large juice limes
- 1 large hot pepper (chopped)
- 1 large onion(thinly slice)
- 2 large cucumber (wash and thinly sliced)
- salt to taste
- water
Preparation:
- Wash meat and add to 8 cups boiling water
- allow to boil until beef is no longer pink
- Strain away water , wash beef gently
- Add 6 cups water , 1 cup vinegar and 1 tps. salt
- Pressure meat for 7 minutes
- Pour into a large container and allow to cool to room temperature
- add cucumbers, onions, pepper and 1 cup vinegar
- Add the juice of limes 1 at a time and salt until desire taste is reach
- Set aside for 1 hour
