Souse , a liquid , meat and other ingredients is not considered a soup but the only name souse. It can be made from different cuts of meat , my recipe will deal with 5 different cuts in order of preference. All these cuts can be found almost anywhere but because of eating habits some people will only use certain cuts. the choice is yours
Ingredients:
- 4 lbs. round steak (bones remove, clean and cut into bite size pieces) or cow face/cow tongue /pig trotters/chicken foot.
- 2 cups vinegar
- 8 large juice limes
- 1 large hot pepper (chopped)
- 1 large onion (thinly slice)
- 2 large cucumbers (wash and thinly sliced)
- salt to taste
- water
Preparation:
- Wash meat and add to 2 cups water
- allow to boil until beef is no longer pink
- Strain away water, wash beef gently
- Add 6 cups water, 1 cup vinegar and 1 tablespoon level salt
- Pressure meat for 7 minutes
- Pour into a large container and allow to cool to room temperature
- add cucumbers, onions, pepper and 1 cup vinegar
- Add the juice of limes 1 at a time and salt until desire taste is reach
- Set aside for 1 hour
