How to Curry Chicken Breast

Chicken breast is considered a dry piece of meat, but with my special preparation, it will be transformed into one of the most succulent piece of meat you will ever eat.

Ingredients:

  • 2 lbs boneless chicken breast
  • 1/2 table spoon baking soda
  • 2 tablespoon curry powder
  • 1 tablespoon ground coriander
  • 1/2 tablespoon ground cumin
  • 1/2 tablespoon ground turmeric
  • 1 medium onion (chopped)
  • 1/2 head garlic (chopped)
  • 1 medium hot pepper
  • 1 pot spoon oil
  • salt to taste

Preparation:

Remove all fat from the breast. Cut breast into bite size pieces. Add baking soda and mix well into meat, then set a side for 1 hour.

Mix all ingredients except oil in a bowl. Add 1 cup of water to mixture and mix again.

Heat oil in a pan or pot. Add mixture to the pan and stir for 2-3 minutes. Add water if needed, and continue stirring for another 3-4 minutes.

Wash the breast 3 to 4 times to remove baking soda taste. Drain and add to pan.

Stir until meat is covered with curry mixture. Cover pan and allow to simmer for 2 minutes.

Remove the cover, and allow 2-3 more minutes, then remove from the fire.
