Whole turkey can be cooked in 4 different ways, (1) charcoal rotisserie. (2) electric rotisserie. (3) deep frying and conventional oven. The choice is all yours. I will start with the conventional way because most people still use this method.
Ingredients:
- 1 12-15 lbs turkey
- 1 table spoon baking powder
- 2 table spoon salt
- 10 head scallion
- 1 head garlic ( PEELED)
- 1 pack fresh thyme
- 2 stalk celery
- 1 teaspoon black pepper
Preparation:
- Wash and clean turkey, cut breast skin from bottom to top on both sides
- Carefully peel skin all the way to the neck
- On both sides make thin slices on the breast
- Apply baking soda to the slices rubbing in between each slice
- add 1 tablespoon all over turkey under its skin where possible
- Pull skin to original position, place turkey in a large container and refrigerate overnight
- Remove turkey and wash thoroughly to remove baking soda taste
- Place turkey on a cutting board and rub with black pepper
- Blend scallion, thyme, garlic , celery and remaining salt
- rub blended ingredients all under turkey skin where possible making sure that some is rub into the slices
- Wrap turkey in foil and place in fridge for 1 day at least
- pre heat oven to 450 degrees
- place turkey on a baking rack on a pan and bake at 450 for 30 minutes, then reduce heat to 375 degrees
- When breast is 165 and legs is 170 remove bird
- let sit for 30 minutes
- SERVE
