This recipe is unique in that very few know about it. It is particularly good with dahl and rice or as a finger food.
Ingredients:
- 1 lb. smelt, or similar size fish will do. If only fish fillet is available then cut fillet into finger size pieces.
- 1 tablespoon curry powder (heap)
- 1 tablespoon ground parched cumin (level)
- 1/2 table spoons ground parched coriander (level)
- 1/2 tablespoon salt
- 1/2 medium onion (blend)
- 2 cloves garlic (blend)
- 2 cups oil for frying
Preparation:
Wash fish and remove the middle bone, if possible. Mix fish with all ingredients except oil. Heat oil in a pan. When oil is very hot add 1/4 portion fish (try to separate fish as much as possible).
Allow to fry, until fish is loose from the pan . Flip, and allow to fry to desired crunchiness. DO NOT OVER FRY IT. IT IS BETTER TO UNDER FRY
PRACTICE MAKES PERFECT
Excellent as a finger food and there will never be enough. Also excellent with dahl and rice.

How to Make Curry Fried Fish
Buffalo wings really is chicken wings baked with hot sauce added. The taste is primarily on the hot sauce and little on the actual wings, but the combination makes this a wonderful finger food.
Ingredients:
- 3 lbs chicken wings
- 2 large hot peppers
- 1 cup vinegar
- 1 8 oz. tomato sauce
- 3 tablespoon paprika
- 1 tablespoon garlic powder
- 1 teaspoon ground dry thyme
Preparation:
Cut wings at the shoulders, remove tips and wash.
In a large bowl mix wings, garlic, thyme and 1 table spoon salt then set aside.
In a blender add peppers, 1 tablespoon salt, tomato sauce and vinegar. Blend until smooth then set aside.
Place the wings in a large baking pan and spread wings out as much as possible.
Pre heat oven to 375.
When oven is ready place pan in oven and bake for 20 minutes uncovered.
Remove from oven and mix paprika into wings. Return to oven for 10 more minutes,
Remove from oven and mix hot sauce into wings. Mix Well. Return to oven for 5 final minutes.

Real Buffalo Wings
This recipe is not like most beef patty recipe. It is really excellent as a snack, a meal or as a finger food.
Ingredients:
- 1 lb lean ground beef
- 1 lb flour
- 1/4 lb butter/margarine
- 1 1/2 tps salt
- 2 heads of scallion (chopped)
- 1 egg
- 1 tps oil
- 1 tin green peas (drained)
- 1/2 tps black pepper or 1/4 hot pepper ground
- 1/2 tps corn starch
- 2 packs beef bullion
- flour for dusting
- cold water
Preparation:
Heat oil in a pan and add ground beef, scallions, 1 tps salt, black pepper and beef bullion. Stir until beef loses it’s liquid and starts frying.
Allow to fry while dissolving corn starch in 1/4 cup water. Add dissolved corn starch and mix into meat for 1 minute.
Remove from fire and allow to cool. Drain off all excess liquid as much as possible.
In bowl add flour, butter and salt. Mix with your fingers or an egg beater. When the butter blends into flour, add 1/2 cup cold water and continue to mix while adding a little cold water as needed.
When mixture begins to come together make ping pong size balls. Flatten balls using a rolling pin and dust with flour if necessary.
Add 1 tps meat into the middle of flat dough. Fold so that both ends meet, close using a wet fork by pressing down the ends. Repeat this for all balls.
Pre heat oven to 350 degrees. Place patties on baking pan and bake for 15 minutes.
While baking beat the egg with 1/4 cup water. After 15 minutes remove patties from oven, brush on mixed egg and return to oven for 10 more minutes.
Remove from oven and let cool for 10 minutes.
EAT WITHOUT THINKING. THIS IS REALLY SUPER EXCELLENT. ANYTIME ANYWHERE ON ANY OCCASION.

How to Make Beef Patties
This is another great finger food wonderful as a snack or at any gathering including cocktails.
Ingredients:
- 1 lb shrimp (de-vein)
- 1 lb flour
- 1/4 butter/margarine
- 1 tps salt
- 2 head scallion(chopped)
- 1/2 tps black pepper
- 1 tps oyster sauce
- 1 tps. oil
- 1/2 tps corn starch
- 1 egg
- flour for dusting
- cold water
Preparation:
- Wash and chop shrimp into very small pieces
- Heat oil in pan
- Add chopped shrimp ,scallion,black pepper,oyster sauce and 1/2 tps. salt
- Stir fry mixture until shrimp begins to fry
- Dissolved corn starch in 1/4 cup water, add to shrimp and stir for 1 minute
- Remove from heat and set to cool
- MIX butter into flour using either your fingers or an egg beater
- add 1/2 cup cold water continue to mix adding water if NECESSARY
- When mixture begins to come together make one large ball squeezing if necessary
- Divide mixture into ping pong size balls
- Flatten ball using a rolling pin
- Add a little shrimp and spread across the middle of the dough
- Fold dough from one end to the next
- Use a wet fork to close the ends of patties
- Repeat this with all other balls
- Preheat oven to 350 degrees
- Place patties on a pan and bake for 15 minutes
- Beat egg in a bowl with 1/4 cup water
- Remove patties and brush on egg wash
- Return to oven for 10 more minutes

How to Make Shrimp Patties
Cheese Rolls are a different kind of pastry. It’s Cheap to prepare and really great as a snack or as a finger food.
Ingredients:
- 1 lb. flour + flour for dusting
- 1/4lb. butter
- 1/2 teaspoon. salt
- 1 cup 1% milk cold
- cold water
- 1 egg
- 1/2 lb. sharp cheddar cheese(grated)
- 1 teaspoon. plain mustard
- 2 teaspoon. tin milk
- 1/2 hot pepper (grained) or 1 tbs. hot sauce
- A touch of salt
Preparation:
Mix grated cheese, mustard, milk, pepper and salt into a thick paste and set aside.
Mix flour, butter, salt and milk with a whisk or your fingers, but do not kneed. Add a little cold water and continue until mixture starts to come together.
Make ping pong size balls. Flatten each ball using a rolling pin, and dust with flour if necessary.
Add a little cheese paste and spread across. DO NOT COVER THE WHOLE SURFACE JUST A LITTLE FROM THE FAR END.
Fold once to half-way, then fold again to the other end.
Use a fork to close the ends. NOTE DO NOT PUT TOO MUCH CHEESE PASTE IT WILL BURST THE ROLL WHILE BAKING.
Heat oven to 350 degrees. Place rolls into oven and bake for 15 minutes.
Beat the egg with 1/4 cup water. Remove rolls from oven and base with egg wash.
Return to oven and bake for 10 more minutes. Remove from oven and let cool.
SERVE AS A SNACK OR IT’S REALLY GREAT AS A FINGER FOOD.

How to Make Cheese Rolls
This is a unique recipe, it can be eaten with rice. bread or alone as a finger food.
Ingredients:
- 2 lbs boneless chicken breast
- 1 tps baking soda NOT BAKING POWDER
- 2 table spoon curry powder
- 1/2 tablespoon ground cumin
- 1/2 tablespoon ground coriander
- 1 onion , 4 clove garlic and 1 medium pepper (BLEND)
- salt to taste
- oil for frying
Preparation:
- Cut breast into finger size pieces
- add baking soda and mix well set aside for 10 hours
- mix all other ingredients together EXCEPT OIL
- After 10 minutes rinse breast and drain
- mixed into curry mixture and set aside for 1 hr.
- heat oil in pan when hot place 6-10 fingers and allow to fry to golden brown remove and repeat until all fingers are cooked
serve alone , with bread or veggie rice

How to Make Fried Curry Chicken Fingers
Salt fish cakes or fish cakes are very popular and can be made in several ways.It is very good with a sauce and rice, with bread, as a sandwich, or as a finger food.
Ingredients:
- 1 lb. boneless salt fish
- 1 large potatoe
- 1 egg
- 1 medium hot pepper(grind)
- 3 bulbs scallion(chopped)
- Flour for dusting
- Oil for frying
Preparation:
Steam the salt fish for 5 minutes. Strain, wash and mash with cold water. Strain and squeeze the excess water away. Wash again if more salt needs to be removed. Do not wash away all the salt, just leave the salt according to taste.
Peel, wash, and cut the potatoes into 4 pieces each. Boil them until tender. Allow the potatoes to cool. Mash them until smooth, then add to the salt fish.
Add the egg, pepper, scallion and mix thoroughly. Make this mix into small bite size cakes or balls (20-24).
Heat oil in pan. Dust 5 or 6 of the cakes/balls with flour and fry them until their golden brown all over. Repeat until the mixture is done.
Allow this to cool. Serve it with bread or as a finger food Can also be serve with a stew sauce and rice

How to Make Salt Fish Cakes
Stuffed eggs is a tasty finger food, very inexpensive and simple to prepare. There is never enough at a party.
Ingredients:
- 12 large eggs
- 2 tsp. mustard
- 1/2 stick of butter
- 1 medium pepper grind or blend without water
- 4 tablespoon tin milk
- Salt to taste
- 4 bulb scallion/shallot finally chopped
Preparation:
Hard boil the eggs, cool, peel and cut into halves length wise. Remove all yolks.
Add all ingredients and yolks into a bowl. Mix and mash until blended and smooth.
Scoop mixture and place into each empty half egg white. Repeat until all mixture and eggs are full.
Good alone or can be eaten with bread or roti.
